4th Wave Coffee Sauce

Batch 1: fermented >8 months, 20 bottles

Ingredients: cold brew coffee, black habanero, roasted tomato, roasted red onion, mulberry, black garlic, pomegranate molasses, roasted garlic, sugar, kosher salt, fresh lime juice

I love high quality coffee and hot sauce, so I experimented here with both, to resounding success. After roasting the onion, garlic, and tomatoes, all the veggies were then cold smoked before being placed in fermentation for three months. After processing the sauce, it was then smoked a second time before bottling. What remains is a dense, rich sauce that starts sweet and tart, before going spicy, with most of the smoke coming on the finish. The coffee is present, but not dominant, creating a delicious harmony.

Excellent accompaniment to grilled and smoked meats and veggies.
